Ingredients:
- 1.5 cups grated carrots
- 1 sour apple Grated orange zest (from 1 orange)
- 1 cup flour (e.g., cake flour)
- 1 cup Xylitol
- 1/2 cup odorless and flavorless coconut oil
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 teaspoon gingerbread spice
- 1 teaspoon baking soda
- 4 eggs
- 1/2 teaspoon salt
Instructions:

Sift flour into a large bowl, add baking powder, baking soda, salt, orange zest, cinnamon, and gingerbread spice. Mix all the ingredients thoroughly and add the oil.

With a hand mixer, mix eggs with sugar and pour into the batter. Mix everything again.

Finally, add the carrot puree and finely grated apple. Mix everything thoroughly once more.
- Preheat the oven to 180 degrees Celsius. Line a round cake pan with parchment paper, pour the batter into the pan, and place it in the preheated oven. Bake our cake at 180 degrees Celsius for about 50 minutes.
- After 50 minutes, check with a toothpick if the cake is done - if it's moist, leave the cake in the oven and check it every 5 minutes using the same method. You can also sprinkle the cake with powdered sugar if desired.
